Souraya's Tarator (Lebanese Tahini Sauce)

Recipe developed in collaboration with Chef Ryan Eckles (Project Bread) and Chef Souraya (Quincy)

Tarator is made with tahini (sesame paste), lemon juice, garlic, and a touch of salt. This versatile creamy sauce is bursting with flavor. Traditionally used as a mezze or appetizer dip, it can also be drizzled over grilled meats, roasted vegetables, blended with chickpeas or even used as a flavorful salad dressing.

A falafel sandwich in a multigrain pita, drizzled with Souraya's Tarator (Lebanese Tahini sauce).

Yield: 16-20 ounces (depending on water added)

Ingredients

1-2 cloves Garlic minced fine or paste

3/4 cup Lemon Juice

2-4 Tbsp. Water

10 oz Tahini (stir well)

1/2 tsp. Salt

Directions

1. Combine all ingredients with a whisk or blender and salt to taste. Use water to thin to the desired consistency.
