Z's Fiesta Chicken Quesadillas

Recipe developed in collaboration with Chef Ryan Eckles (Project Bread) and Chef Z (New Bedford)

This recipe is a winner for its versatility! The flavors may seem familiar and that’s because it is inspired by our popular Spicy Chicken Flatbread. The flavorful chicken filling can be used for quesadillas (like in this recipe!), tacos, pizzas/flatbreads, loaded fries/tots, wraps, and even salads. With pre-cooked diced chicken, this recipe comes together quickly, perfect for busy kitchens.

Ingredients

50 Whole Grain Tortillas

2.5 lbs Diced Chicken (thawed)

2.5 lbs Shredded Cheese

2 cups Peppers, diced

1 cup Onions, diced

50 oz Salsa (canned)

1 Tbsp. Onion powder

1 tsp. Cumin

2 Tbsp. Chili powder

1/2 tsp. Black pepper

1 Tbsp. Oregano 

1 Tbsp. Garlic 

1/2 cup Banana Peppers, diced

1 Tbsp. Honey/Sugar

Garnish with Sour Cream and Green Onion or Cilantro

Directions

  1. Preheat oven to 400 degrees. Combine salsa with all the seasonings to make the Fiesta sauce - onion powder, cumin, chili powder, black pepper, oregano, garlic, banana peppers, and honey.
     
  2. Mix the diced peppers and onions, chicken, and Fiesta sauce and let sit for 30 minutes to 2 hours.
     
  3. Cook in shallow 2 inch hotels with a cover for a moister chicken dish (20-40 minutes) or spread on parchment lined sheetpans to get more caramelization and less moisture (15-25 minutes).
     
  4. Fill tortilla with 1 oz of cheese and 2 oz of Fiesta Chicken and fold in half and place on a parchment lined sheetpan. Spray with cooking oil. Fill sheetpan and bake until cheese is melted 5-10 minutes. OPTIONAL: cover quesadillas with another parchment and place a sheetpan on top to weigh them down as they bake to keep uniform shape and color.
